Grilled Salmon with Avocado-Mash and Tomato relish

Hello friends,

my first recipe post on this blog, it’s very exciting for me and also a little bit scary! This recipe has vastly become one of my favorites and since I had been a vegetarian for 3 and a half years, it’s also really easy to cook, even for a beginner like me. You do need 3 different pots and pans, so it’s a little washing to do afterwards, but I would consider this meal one of my more exquisites. You could obviously garnish it with a wee bit of lemon and parsley.

Level of difficulty: simple | Time needed: 40 min | Pescetarian

Ingredients (for 1 person):

  • 1 filet of salmon
  • olive oil
  • 3-4 big potatoes
  • 1/2 avocado
  • lemon juice
  • 3 tablespoons creme fraiche
  • salt and pepper
  • 1 red onion
  • balsamic vinegar
  • 10 olives (preferably some with lemon filling)
  • 7 cherry tomatos
  • chilli powder
  • water
Instructions:
  1. Peel and boil the potatoes until they are soft, then mash them together with avocado, creme fraiche, lemon juice, salt and pepper. Keep warm.
  2. Peel and cut the onion in bigger chunks, then sauté them with olive oil in a pan, add a little bit of balsamic vinegar to deglaze it, add more water if it quickly vaporizes. Wash the tomatoes, cut them into quarter and the olives in halves. Add them to the mix and let it simmer until it is soft.
  3. And lastly the fish, heat up some love oil in a fresh pan, meanwhile wash the fish, dry it thoroughly and salt it on both sides. When the oil is hot, grill the fish for a few minutes until it has a nice crust, then flip it and do the exact same thing. This will only take up 3-4 minutes and fish should be well-done.
